Frenchfriesarefriedinatwo-stepprocess:thefirsttimeistocookthestarchthroughouttheentirecutatlowheat,andthesecondtimeistocreatethegoldencrispyexteriorofthefryatahighertemperature.Thisisnecessarybecauseifthepotatocutsareonlyfriedonce,thetemperaturewouldeitherbetoohot,causingonlytheexteriortobecookedandnottheinside,ornothotenoughwheretheentirefryiscooked,butitscrispyexteriorwillnotdevelop.Althoughthepotatocutsmaybebakedorsteamedasapreparationmethod,thissectionwillonlyfocusonfrenchfriesmadeusingfryingoil.Duringtheinitialfryingprocess(approximately150 °C),wateronthesurfaceofthecutsevaporatesoffthesurfaceandthewaterinsidethecutsgetsabsorbedbythestarchgranules,causingthemtoswellandproducethefluffyinteriorofthefry.[17] Thestarchgranulesareabletoretainthewaterandexpandduetogelatinisation.Thewaterandheatbreaktheglycosidiclinkagesbetweenamylopectinandamylosestrands,allowinganewgelmatrixtoformviahydrogenbondswhichaidinwaterretention.Themoisturethatgetstrappedinbetweenthegelmatrixisresponsibleforthefluffyinteriorofthefry.Thegelatinisedstarchmoleculesmovetowardsthesurfaceofthefries"formingathicklayerofgelatinisedstarch"andthislayerofpre-gelatinisedstarchwillturnintothecrispyexteriorafterthepotatocutsarefriedforasecondtime.[18]Duringthesecondfryingprocess(approximately180 °C),theremainingwateronthesurfaceofthecutswillevaporateandthegelatinisedstarchmoleculesthatcollectedtowardsthepotatosurfacearecookedagain,formingthecrispyexterior.Thegolden-browncolourofthefrywilldevelopwhentheaminoacidsandglucoseontheexteriorparticipateinaMaillardbrowningreaction.[17]
